eggs are a multipurpose food source. they can be served a plethora of ways and are a delicacy amongst many cultures. eggs are an aid in baking and frying and act as a binder in birthday cakes and chicken cutlet breading. there are a variety of breakfast dishes that the egg stars in, including but not limited to personal choice diner classics like: scrambled, over (easy, medium, or hard) poached, as an omelette with veggies and chives, hard boiled, fried, or fluffy and light like the French. cheesy or buttered. eggs are both polarizing and delicious. as multifunctional as they can be and are, they can also smell like farts, can appear grey and ghostly, and if you crack enough of um, youβll find blood and other evidences of life, because after all, eggs are unfertilized baby chickens. theyβre connected to an animal. that fact alone can put eggs away for me.
and, the also true reality, is that eggs are a gift. they are divine evidence of the abundance, intention, time, and wonder. various food sources related to the animal, nature has proved and Mother Earth has affirmed, offer us purposeful knowledge and instruction. the human creativity and culinary sciences, took the egg and created carbonara. this analogy also can be found in the reflections of ourselves. our lives are what we choose to do with the egg. you can be as adventurous or simple as you please, and still, you will reap the benefits.
so, when cooking for a wary egg eater, incorporate salt, pepper, fat, and dairy. fat can include ghee (clarified butter) for postpartum incorporations, olive oil, butter, or avocado oil. there are healthy fats. do not be shy when using them, especially for recovering birth-givers. when adding dairy, this can mean a splash of milk in your egg bath, and/or a slice or three of rich, creamy, nearly sweet, American cheese, almost canceling out thatβ¦ prominent eggβ¦flavor. other sources of protein also makes a great pair to eggs. while postpartum mothers/birth-givers are discouraged from eating heavy or fried foods, lean meats and beans are a great source of nutrients. like beans and legumes, savory but texturally dense, can play on the umami that mingles well with the fluffy, soft texture of eggs. think, breakfast burrito.
birth-givers is a gender neutral term i will use in conjunction with mothers, to provide inclusive language in this vast, ever-changing, gender-neutral, space, role, conversation, of parenthood/caretaking/giving and hold space for various identities. not every mother is a woman. not every person who gives birth is a woman. and not every person identities with feminine pronouns or titles. itβs not complicated, and all birth-givers can be honored with this loving acknowledgment.
i want to keep this openness at the heart of this work. to encourage a sense of fluidity, i will use all titles interchangeability.
maybe youβre getting away from breakfast now, but eggs can go there too. beef up your leftover dinner rice with a few cracked eggs and enjoy a hearty fried rice. add bok choy also known as βChinese white cabbageβ frozen veggies, ginger, and garlicβ¦ and now, youβre having a cultural experience. eggs, the supportive role in a now balanced, tasty dish. one you deserve.
a herby quiche with sage, basil, and garden veggies like spinach, broccoli, and peppers make feel eggs sophisticated, bright, and give an extra crunchy texture that make more of a meal out of this essential. a heavily battered batch of french toast, egg nog for my fellow freak hoes, and deviled eggs for my freaky-freaky hoes, are another way to sneak in or diversify eggs for various times of day.
Eggs are an affordable (even if through community care) practical and impactful way to increase the quality of breast milk for lactating parents, and sustain the needed, well earned, and energy protein packed foods provide. itβs your birthright.
